Kerala puttu

To make rice flour:

  1. Soak the rice for about 3 hours and strain it.
  2. Spread the rice on a cloth or a plate and dry the same.
  3. Grind the dried rice to a fine powder.

To make puttu:

  1. Add salt and water to the rice flour. This is a tricky part.
  2. Don`t add too much or too little water.
  3. Try to make a lump out of the wet mixture and ensure that the lump does not break off.
  4. This is the right stage when you need to stop adding the water.
  5. Now add a handful of grated coconut in the puttu maker followed by three handfuls of rice flour and again followed by one handful of grated coconut.
  6. Follow this step till you reach the top of the cylinder.
  7. Cover with the lid and steam for 2-3 minutes.

Tip: If you don`t have a puttu maker, you can still use the idli plate. Fill the layers of coconut and rice flour in the idli plate and cook it in the pressure cooker.
