Add curds (buttermilk) to make the batter.
(The batter should not be too thick or too thin) Add more buttermilk if needed according to the consistency of batter.
Mix well and keep it aside for about 7 to 8 hours in a warm place
In the batter:
Add onion, green chillis, garlic, turmeric, sugar and salt
Heat a non-stick pan and grease it with little oil
When the temperature is right, pour a large spoonful of the prepared batter.
Spread it to a little thick round shape
Put oil on all sides of the Uttappam
Flip once and let the other side cook well
Repeat for all of the remaining
Serve hot with green chutney , tomato ketchup or pickels.
1 cup wheat flour
1 cup rice flour
1 cup gram flour
1 cup corn flour
1 cup cabbage finely chopped
2 cups curds well beaten with water added to make buttermilk
1 medium onion finely cut into long strips
6 to 7 green chillis finely chopped
2 pcs. of garlic crushed
1/2 tsp. turmeric
Oil
1 tsp. sugar
Salt to taste
