Patal Bhaaji

  1. Combine all the vegetables, add enough water to cover them and cook till soft. Strain and reserve the water.
  2. Heat ghee or oil in a kadai. Add cloves and cinnamon.
  3. Add onion and green chilies. Fry till onion is light brown.
  4. Add tomato and fry till it is reduced to a pulp.
  5. Measure the water in which vegetables were cooked.
  6. Add more water if needed to make it 2 cups.
  7. Take some of this liquid and mix besan to a smooth paste.
  8. Add remaining liquid and mix well.
  9. When the tomato is pulpy, add the besan liquid and salt.
  10. Simmer for 3 to 4 minutes.
  11. Serve hot garnished with coriander leaves.
  12. This recipe is from Konkan coast. Patal means thin in konkani.
  13. This is a light sabji that goes well with poori or chapathi

Serves: 4 to 6

cup - potatoes, peeled and diced
cup - carrot, peeled and diced
cup - beans, chopped
cup - green peas, peeled
cup - tomato, chopped
cup - besan
cup - onion, chopped
2 tbsp - ghee/oil
2 pieces - cinnamon
4 to 6 - green chilies, slit
4 - cloves
coriander leaves to garnish
