Sukto (Bengali Dish)

  1. First cut all vegetables except karela into medium pieces (neither too small nor too large).
  2. Cut karela in ring like pieces.
  3. Heat 2-3 tbspn oil in a pan and deep fry the karela pieces.
  4. Keep aside these fried karela.
  5. Again add some oil in that pan and then add panch phoran, mustard seeds and dry mirch and allow them to splutter.
  6. Add all the vegetables except fried karela into it and fry them for 5-7 minutes.
  7. Then add salt and sugar and pour some water.
  8. So that all vegetables are just be submerged into water.
  9. Cover the pan and let the vegetables boiled.
  10. Check the potatoes.
  11. When potatoes will be done that means other vegetables are also done.
  12. Now add fried karela pieces, milk and water paste of mustard seeds powder with the gravy of boiled vegetables.
  13. Let it cook for another 2 to 3 minutes and add ghee.
  14. Stir well and serve hot with plain rice before serving any other dishes with rice.
karela - 1 (large) piece
drumstick - 3 long pieces
parval - 4 pieces
potato - 1 (large)piece
french beans - 1/2 cup
brinjal - 1 (small) piece
unriped banana (optional) - 1 piece
seasame - 3 pieces
mustard seeds - 1/2 tsp
dry mirchi - 2 pieces
sugar - 1 tsp
milk - 2 tsp
paanch phoran - 1/2 tsp
ghee - 2 tspn
paste of mustard seeds powder with water - 1 tbsp
salt to taste
