Aloo ka chow chow

Method
  1. Heat ½ tsp. oil.
  2. Fry mustard and fenugreek seeds and red chillies.
  3. Add turmeric and asafetida and grind to a fine paste.
  4. Heat remaining oil. Add carrots and beans. Fry till soft.
  5. Add salt, ground paste and cook till crisp but done.
  6. Add whole potatoes and lemon juice.
  7. This may be served cold or hot.
Ingredients:
1/2 kg. small potatoes, boiled, peeled
1/4 kg. French beans, strings removed, halved
2 carrots, peeled, cut into strips
1 tbsp. mustard seeds
1/2 tsp. fenugreek seeds
1/4 tsp. asafetida
10 red chillies
1/2 tsp. turmeric powder
1 tbsp. lemon juice
1/4 cup oil
Salt to taste
