Method
  1. Apply half a tsp of turmeric powder and salt to the slit padwals.
  2. Heat oil in a pan and deep fry the padwals until brown in colour.
  3. Drain and keep aside.
  4. In the same oil, add the cumin seeds and grated ginger. Saute for a minute.
  5. Add the spices, sugar, salt and the beaten yoghurt. Mix well.
  6. Let it simmer till the oil leaves the sides of the pan.
  7. Add the fried padwals again to the mixture and add half a cup of water to it.
  8. Allow it to simmer till the gravy thickens.
  9. Serve hot with luchis (puris) or parathas.
Ingredients:
8 nos. padwals (slit vertically into half)
1 tsp. turmeric powder
1 tsp. red chilli powder
1 tsp. cumin powder
1 tsp. yoghurt (beaten)
1 tsp. cumin seeds
4 tbsp. mustard oil
1 tsp. ginger, grated
1 tsp. sugar
Salt to taste
