Method
- Steam dhokla as per instructions on packet.
- Do not add seasoning.
- Break into chunks, cool to room temperature.
- Break into crumbs with hand, then pass through a large holed mesh.
- Mixture should resemble coarse bread crumbs.
- Heat oil in a pan, add seeds, asafetida, allow to splutter.
- Add garlic, chilli, onions, saute till transparent.
- Add khaman crumbs, take off fire.
- Gently mix together keep aside till required.
- Warm crumbs in microwave as and when required.
To Proceed:
- Put a tbsp or more of crumbs in individual bowls.
- Drizzle a bit of both chutneys.
- Top by sprinkling chopped onions, sev and coriander.
- Serve immediately.

Ingredients: 1 - khaman dhokla mixture
1 - onion, finely chopped
2 flakes - garlic crushed
1 or 2 - green chillies finely chopped
� tsp - mustard seeds
2 to 3 pinches - asafetida powder
2 tsp - oil
salt to taste
Other Ingredients:
1 - onion, finely chopped
1 tbsp - coriander, finely chopped
� cup - fine sev
2 to 3 tbsp - green all purpose chutney (refer recipe in chutneys section, cookbook)
2 tbsp - sweet tamarind chutney (refer recipe in chutneys section, cookbook)
