  1. In a flat heavy bottomed pan or wok, heat the top and mix and roast the semolina in till it turn pinkish brown.
  2. An indicator that it is done is that you can smell the aroma of rava even at a distance from the kitchen.
  3. Simultaneously, boil the liquid separately.
  4. Add the liquid to the rava. Stir, cover and steam on a low heat (4-7 minutes). Stir.
  5. Mix in sugar and cook covered until fluffy (5-7 minutes). Mix in � of the cardamom seeds, raisins and nuts.
  6. Use the remaining to garnish the sheera.

For a more traditional flavor, substitute sugar with jaggery.

1 cup - semolina
� cup - semolina
3 tbsp - clarified butter
� cup - water
� cup - milk (liquid)
10 - raisins
5 to 10 - silvered cashews
3 to 5 - silvered almonds
a grating of nutmeg
2 to 3 - cardamom pods
