Method
- Take water in a bowl, add vanilla essence, sugar, lemon juice and oil.
- Mix well till sugar completely dissolves. Keep aside.
- Now take flour, baking soda, baking powder and cocoa powder and sift together twice at least to make sure the flour, soda and baking powder and cocoa powder are evenly spread out.
- Then slowly add the sifted flour mixture to the wet ingredients mixture - may be in 2 parts.
- Gently mix in one direction until no lumps are formed, then add half of the choco chips and gently mix.
- The batter should be runny.
- Preheat oven to 180 deg C for 10 mins.
- In the meanwhile, grease the cake pan with a few drops of oil and pour the batter into the cake pan and top it with remaining choco chips.
- Bake at 180 deg C for 35-40 mins.
- Check if a fork inserted comes out clean.
- Make sure to cool completely for about 10-15 mins and then invert carefully and cut into pieces and serve.
Notes:
1. The mixing and measurements matter the most for a perfectly moist cake.
2. The batter should be at least half of the cake pan when you pour it in.
