Pizza Quattro Fungi

Method
  1. To make a pizza dough combines all the ingredients and knead it together.
  2. For best result, leave the dough in the room temperature for at least one hour.
  3. Cut the tomatoes in to halves and sprinkle salt, sugar and basil and allow it for roasting in preheated oven for 10 minutes in the temperature of 180*c.
  4. Make a puree out of it and reduce it in to half. At the end add dry oregano olive and correct the seasoning.
  5. Toss the mushrooms with white wine (optional), salt and pepper.
  6. Weigh the dough around 180 g per portions and roll it into even round shape.
  7. Apply pizza sauce on top of the rolled pizza leaving a gap of half inches in the diameter, top up with mushrooms and mozzarella cheese.
  8. Bake it in the preheated oven for 5-6 minutes in the temperature of 200*c
  9. While baking in the oven turn around the pizza in order to get even colour in the crust.
  10. Sprinkle fresh basil leaves on top and serve hot.

Tips: you can top with any type of veg and non-veg as per your requirement

Ingredients:
For dough:
for 30 pizzas thin crust 12 inches
2700 g - refined flour
300 g - semolina
300 ml - milk
1200 ml - water
300 ml - olive oil
108 g - yeast(fresh)
25 g - sugar
60 g - salt

For Topping:
30 g - morel mushrooms dry soaked
50 g - shitake mushroom boiled
60 g - button mushroom raw
30 g - chanterelle mushrooms raw

For Pizza sauce:
400 g - fresh tomato
15 g - basil
salt to taste
sugar to taste
03 g - oregano(dry)
75 ml - olive oil
