Stir fry for 3-4 minutes.
Dissolve corn flour in the milk. Add to the vegetables, stirring continuously.
Add the salt, pepper, cheese and cook, stirring continuously till thick and creamy.
Cool the mixture for 10 minutes.
Pile onto each slice and grill in a hot oven for 5-7 minutes till the bread gets crisp.
Eat hot with ketchup or chilli garlic sauce.
Note: Use vegetable variations of your choice. eg. add cauliflower or delete potato, etc. Make the mixture when you do your main kitchen chores, keeping it slightly softer, store in the refrigerator and just grill on bread when to be eaten. Supplement with a big glass of hot chocolate milk to complete the meal.
