Multi Grain Dosa

Method
  1. Wash and soak all the dals with fenugreek in water for 2 hours.
  2. Grind them with cumin, asafetida and green chilies to a fluffy batter, using the water in which they were soaked.
  3. Combine all the flours together.
  4. Beat the curds till smooth and stir in sugar and salt.
  5. Add the curds to the mixed flours.
  6. Add enough water to make smooth, thick batter.
  7. Mix this batter with dal batter.
  8. Add more water to get a consistency like usual dosa batter.
  9. Keep coveredfor 4-6 hours.
  10. Make thin dosas on hot tawa, cooking both sides with little oil.
  11. Serve hot with chutney.
Ingredients:
green gram (moong) dal - 1 cup
black gram (urad) dal - 1/2 cup
bengal gram (chana) dal - 1/2 cup
fenugreek seeds - 2 tsp
cumin seeds - 2 tsp
red chilies - 4 to 6
asafetida - 1/2 tsp
rice flour - 1 cup
whole wheat flour - 1/2 cup
ragi (black millet) flour - 1/2 cup
curds - 2 cup
sugar - 2 tsp
oil to cook dosas
salt to taste
