Sponge dosa

Method
  1. Soak washed rice and aval together in buttermilk overnight.
  2. In the morning, drain the excess buttermilk if any and grind to a smooth batter, a little thinner than the regular idly dosa batter.
  3. Add salt (2 tsp) and cooking soda and mix well.
  4. Heat a tawa and pour a ladle full of batter and drizzle oil; don`t spread the batter.
  5. Cook covered over a medium flame for a minute.
  6. Super soft spongy dosa is ready to enjoy!
  7. Serve with a spicy chutney.

2 cups - idly rice (parboiled rice)
1/4 cup - rice flakes/aval/poha
3-4 cups - sour butter milk
1/4 tsp - cooking soda
Oil and salt as needed
