Vermicelli Delight

Method
  1. Heat oil in a kadai and add the seasoning.
  2. Let them splutter; then add the curry leaves and fry for a min.
  3. Add the onion, fry for 2 mins then add the carrot, capsicum and let it cook for a couple of mins.
  4. Add the tomatoes and fry a little till they blend.
  5. Add enough water, salt and let it boil.
  6. Add the roasted vermicelli and toss well.
  7. Cover and cook on low heat.
  8. Let the vermicelli and veggies cook on low heat.
  9. After it is done, stir in the coconut and garnish with chopped coriander.
Ingredients:
1 kg pack - MTR pre roasted Vermicelli
5 - green chillies
1 big cup - chopped onion
1/2 cup - chopped tomatoes
5 tbsp - carrots, grated
1/4 cup - capsicum, chopped
1 cup - grated coconut
6 tbsp - chopped coriander
2 tbsp - curry leaves
Salt to taste
8 tbsp - oil
For seasoning: Turmeric powder, urad dal, channa dal, mustard, jeera and hing
