Hot brinjal pickle

Method
  1. Wash and cut brinjals into small cubes.
  2. Grind the ingredients from 6-11 to a fine paste.
  3. Sprinkle salt and keep for 2&1/2 hours.
  4. Heat oil in a pan and fry the ground masala till golden.
  5. Drain the brinjals and add to the fried masala.
  6. Add the remaining powders, vinegar and crushed jiggery and stir cook for 4-5 mins.
  7. Add the green chillies and simmer for a few mins,.
  8. Remove from fire.
  9. Cool thoroughly and bottle.
  10. Ready for the table immediately.
Ingredients:
1 kg. Brinjals
1/2 bottle gingelly oil
1/2 bottle vinegar
10 green chillies, slit lengthwise
50 gms. crushed jaggery
15 red chillies
1 tbsp. coriander seeds
1 tsp. cumin seeds
grind to a fine paste 1/2 tsp. fenugreek seeds
50 gms. ginger
80 gms. Garlic
1 tsp. turmeric powder
1/2 tsp. asafoetida powder
Salt to taste
