In a kadai put 1 tsp. of oil and fry red chillies. When they turn to maroon colour remove. Put one more teaspoon of oil in the kadai and fry dhania till the colour changes. Then put one more tsp. of oil and fry chanadal, urad dal, jeera, tamarind, curry leaves for 10 minutes and then add sugar, turmeric powder, garlic and salt.
When all the ingredients are cool grind them to a coarse powder. This can be stored in an air tight container.
