Method
- Wash, peel and slice the mangoes into very thin pieces.
- Peel and mince ginger finely.
- Mix the vinegar, sugar, salt, chilli powder and ginger in a saucepan and cook for about 15 mins. stirring constantly.
- Add mangoes and simmer on a very low fire till the mangoes are pulpy.
- Cool and store in dry airtight bottles.

1 kg - green mangoes
1 kg - brown sugar
200 g - fresh ginger
1 � cups - vinegar
3 tbsp - chilli powder
1 tbsp - salt
