Cucumber chutney

Method
  1. Peel cucumber, cut into half inch pieces, keep aside.
  2. Prick the chillies with a needle.
  3. Heat oil (1/4 tbsp), add cucumber pieces and fry for 3 min and remove.
  4. In the same pan, add remaining oil, mustard seeds, jeera, garlic cloves.
  5. Fry till seeds crackle, add green chilli, salt and fry for 2 min.
  6. Remove from fire and grind this with tamarind paste and half the quantity of fried cucumber pieces into a coarse paste.
  7. Add the remaining cucumber pieces and run mixer for a second before removing.
  8. Serve this chutney with hot rice (of course with a spoonful of desi ghee).
  9. You can add raw mustard paste instead of frying it.

200g - cucumber with yellow skin (curry variety)
Salt
1/2 tbsp - oil
4 - green chilli
1/2 tsp - jeera
4 - peeled garlic cloves
1/4 tsp - mustard seeds
1 tsp - tamarind paste
