Sweet`n�Sour Carrot Pickle

Method
  1. Wash and cut the carrot into long pieces.
  2. Boil the water and put the carrot pieces into it.
  3. Let it boil again (give a one boil).
  4. Take out the carrot pieces from the water.
  5. Let them dry in the sun for around two hours.
  6. Mix the salt, chilly powder, turmeric and mustard seeds together and grind them.
  7. Then mix them with mustard oil in a big bowl.
  8. Make small pieces of jaggery and mix it with vinegar.
  9. Then heat them so that the jaggerey melts and mixes well with the vinegar.
  10. Mix the carrot pieces and the mixture of masalas (salt, chilly,turmeric, mustard seeds and oil) properly.
  11. Put this mixture in a jar and then pour the jaggery mixed vinegar into it.
  12. Shake the jar well and keep it in the sun.
  13. After 6-7 days the pickle will be ready.
Note :
The most important ingredient for this recipe is good sunlight.
Ingredients:
5 kgs - carrots (gajar)
500 gms - vinegar
100 gms - red chilly powder
500 gms - jaggery
500 gms - mustard oil
250 gms - salt
100 gms - turmeric (haldi)
150 gms - mustard seeds (rai)
water to boil carrots
