Method
- Wash and cut the carrot into long pieces.
- Boil the water and put the carrot pieces into it.
- Let it boil again (give a one boil).
- Take out the carrot pieces from the water.
- Let them dry in the sun for around two hours.
- Mix the salt, chilly powder, turmeric and mustard seeds together and grind them.
- Then mix them with mustard oil in a big bowl.
- Make small pieces of jaggery and mix it with vinegar.
- Then heat them so that the jaggerey melts and mixes well with the vinegar.
- Mix the carrot pieces and the mixture of masalas (salt, chilly,turmeric, mustard seeds and oil) properly.
- Put this mixture in a jar and then pour the jaggery mixed vinegar into it.
- Shake the jar well and keep it in the sun.
- After 6-7 days the pickle will be ready.
Note :
The most important ingredient for this recipe is good sunlight.
