  1. Heat 1 1/2 tbsp. oil in a pan and saute ladyfingers for a minute on medium heat. Lower heat, cover pan, and cook until lady fingers are tender. Set aside.
  2. In a separate pan, heat 1/2 tbsp.oil and add raw mango strips.Sprinkle with sugar and saute on high heat.Set aside.
  3. In another pan, heat 1 tbsp. oil. Saute fennel and nigella seeds until they crackle. Add onion and cook until translucent. Add ginger, green chilli and powdered spices. Add the sauteed ladyfingers and mango strips.
  4. Add lemon juice and adjust seasoning. Finish with pepper and serve hot.
3 tbsp oil
800 gms lady fingers, trimmed
2 raw mangoes, peeled, cored and cut in strips
2 tsp sugar
1 tsp fennel seed
1/2 tsp nigella seeds (kalonji)
4 onions sliced
2 tsp chopped ginger
2 tsp chopped green chillies
1 1/2 tsp chilli powder
2 tsp coriander powder
1 tsp cumin powder
juice of 1/2 a lemon
salt to taste
1/2 tsp crushed pepper
