Spicy yam curry

  1. Heat oil in a cooker, add onion, green chillies, turmeric powder and curry leaves.
  2. Fry till onion becomes soft and pink.
  3. Add yam, fry for 2min, add red chilli powder, salt and fry for a min.
  4. Add 300ml water, stir well and pressure cook up to 3 whistles.
  5. Wait till steam escapes, remove lid, add coriander powder, crushed garlic, cover and cook under sim for 2mins.
  6. Sprinkle chopped coriander, mix once and remove.
400gms - purple yam (kanda in telugu), peel and rub with some salt, cut into 1 to 1&1/2-inch pieces
2 - medium-size onions, cut into small pieces
2 - green chillies, cut into pieces
1 tbsp - coriander powder (dry fried and powdered)
6-8 - cloves garlic, peeled and crushed
2 tbsp - oil
10 - curry leaves
1 tbsp - chopped coriander
1/2 tbsp - red chilli powder
1/8 tsp - turmeric powder
