Vatta kolambhu (tamarind curry)

Method
  1. Soak tamarind in some water.
  2. After 10 min, extract the juice and keep aside.
  3. Heat oil in a kadai.
  4. Add mustard seeds and let it splutter.
  5. Add curry leaves, asafoetida and fenugreek seeds.
  6. Lower flame and add sambhar powder and turmeric powder.
  7. Now add the tamarind juice.
  8. Allow the water to boil for 10 min before you add the chopped vegetable.
  9. Now boil until the vegetables are cooked.
  10. In the end add jaggery.
  11. Stir and switch off the gas.
  12. Your vatta kolambhu is ready.
Ingredients:
1 lemon-sized piece of tamarind
1/2 tsp - fenugreek seeds
1 sprig - curry leaves
1 tsp - sambhar powder
Vegetables like red pumpkin, drumsticks, ladysfinger or eggplant
2 tsp - sesame oil
1/2 tsp - mustard seeds
3 - dry red chillies
1 small piece - asafoetida
1/2 tsp - turmeric powder
1 tsp - jaggery
