Banana Curry

Method
  1. Grind cumin seeds and ginger to a paste.
  2. Soak chana whole night in water.
  3. Next morning boil in the water in which it was soaked till soft. Drain out the water and set aside.
  4. Peel and slice bananas and potatoes.
  5. Heat 3 tbsps oil and add bay leaves and panch-phoron.
  6. When the mixture turns brown, put in the potatoes and bananas and fry till they turn light golden in colour.
  7. Add all the spices, salt, sugar, ginger paste and tomatoes and cook till dry.
  8. Cover with water and cook till the vegetables are almost done, put in the chana and cook till the vegetables are done.
  9. Remove from fire and mix in garam masala and pure ghee and serve hot.
Ingredients:
2 - raw bananas
2 - small potatoes
25 g - brown dry chana
1 tsp - cumin seeds
1 big piece - ginger
1/2 tsp - turmeric powder
3 - green chillies, slitted
2 - big tomatoes, blanched and sliced
1/4 tsp - panch-phoron
2 - bay leaves
1 tsp - sugar
1/2 tsp - garam masala
1 tbsp - pure ghee
salt and chilli powder to taste
