Bottle Gourd Curry

Method
  1. Heat oil in a pan, add mustard, urid dal, chana dal, red chillies, cumin seeds.
  2. Saute till they splutter and then add turmeric powder, sabji masala powder, curry leaves.
  3. Blend this seasoning well and then add the cut bottle gourd.
  4. Fry the vegetable in the oil until it is cooked and the ingredients have bound together.
  5. Finally, add jaggery and salt.
  6. Bottle gourd gets soft and tender after it is cooked.
  7. Garnish with coriander leaves and serve hot with roti/naan.
Ingredients:
1 - medium sized (diced into small cubes) bottle gourd (doodhi)
1 tsp - mustard
1 tsp - urid dal
1 tsp - chana dal
1 - red chilli
1 tsp - cumin seeds
1 tsp - turmeric powder
2 tsp - sabji masala powder
1 tbsp - jaggery
3 tbsp - sunflower oil
chopped coriander leaves - for flavour
chopped curry leaves - for flavour
chilli powder (if desired)
asafoetida (if desired)
salt to taste
