Method
For Dumpling
  1. Mix fenugreek leaves, a pinch of haldi, red chilli powder, gram flour, hot oil and salt.
  2. Deep fry

For Oondhiu

  1. Boil beans/carrots/yam/sweet potato/lotus stem/raw banana
  2. Deep fry brinjals, potatoes and fenugreek dumpling
  3. In a pan, heat oil, add whole jeera
  4. On crackling add chopped onion , saute till golden brown
  5. Add red chilli and green chilli paste, saute for 2 minutes
  6. Add coconut and coriander paste, cook for 2 1/2 - 3 minutes
  7. Add vegetables and toss
  8. Add water and cook for 2 minutes, correct seasoning
  9. Top with fried fenugreek dumplings and chopped coriander

2 - deep fried eggplant
2 tbsp - chopped onion
ginger garlic paste
1 tbsp - red chilli paste
1/2 tbsp - green chilli paste
coconut and coriander seed paste
zeera powder
dhaniya powder
1/2 tsp - garam masala pd
haldi powder
