MethodFor Dumpling
- Mix fenugreek leaves, a pinch of haldi, red chilli powder, gram flour, hot oil and salt.
- Deep fry
For Oondhiu
- Boil beans/carrots/yam/sweet potato/lotus stem/raw banana
- Deep fry brinjals, potatoes and fenugreek dumpling
- In a pan, heat oil, add whole jeera
- On crackling add chopped onion , saute till golden brown
- Add red chilli and green chilli paste, saute for 2 minutes
- Add coconut and coriander paste, cook for 2 1/2 - 3 minutes
- Add vegetables and toss
- Add water and cook for 2 minutes, correct seasoning
- Top with fried fenugreek dumplings and chopped coriander
