Heat water in idli cooker, put big lemon size balls of urad dough in idli plates, press them with wet hands to form round discs and steam for 7 to 8 min (when you touch the dumpling with wet hands, it should not be sticky).
Remove from fire, serve the idli like aaviri kudumu with ginger chutney/coconut chutney.
This is a tasty and heavy breakfast (but without oil).
It is good for diabetics.
Preparation of ginger chutney:
Fry chopped 2-inch piece of ginger, 2 green chillies, a pinch of jeera and 3 garlic cloves in 1 tsp of oil
Make a fine paste with salt and 1/4 tsp of tamarind paste and a small piece of jaggery (omit jaggery for diabetics).
