Method
- Add 125g of sugar to the milk and leave it to boil on a high flame for 10 min, stirring constantly.
- Place the remaining 75g of sugar in a heavy-bottomed pan with 2 tbsp of water and melt on a low flame.
- Allow the mixture to become dark brown in colour.
- Add this sugar mixture gradually to the boiled milk and boil again for 5 mins.
- Cool the mixture to lukewarm.
- Add the curds and mix well.
- Cover and allow to set for 6-8 hours.
- Serve chilled.
Optional:
In warm weather, pour curd in two earthen pots to cool it and add more taste.
