  1. Wash and soak the rice in water for 30 mins.
  2. Heat the sugarcane juice in a deep pan till it reaches boiling point.
  3. Now drain the water from the rice and mix it in the boiling sugarcane juice.
  4. Cover the vessel and cook on low heat until the rice and juice blend well.
  5. Remove from heat, garnish with chopped almonds, cashews and raisins and serve it hot.
  6. Alternately, you can also refrigerate the kheer for two hours and serve chilled.
1 cup - rice
1 litre - sugarcane juice
2 tsp - almonds, chopped
2 tsp - cashews, broken
7 to 8 - raisins
