Sooji cupcake ( Microwave )

  1. Mix milk, sugar, butter milk,oil and fruit pulp. Beat well.
  2. Add sooji, coconut powder and essence. Mix well and keep it aside for an hour.
  3. Add baking soda to the cake batter and blend well.
  4. Arrange paper cups in microwave safe cups (you can use la-opala cups).
  5. Fill the cups with batter ( leave upper 1/4 empty) put some cashew bit.
  6. Arrange the cups on turnable table and bake under micro high for 1-2mins (check after 1min and continue if necessary).
  7. Before filling the cups, check the consistency of the batter as sooji absorbs more moisture and becomes thick.
  8. You can make it thinner by adding little more curd or milk.
  9. Serve with hot tea.
1 cup fine sooji/semolina
3 tblsp dessicated coconut powder
4 tblsp butter/oil
1 cup milk
1/2 cup fresh curd
1 cup butter milk
3/4 cup powdered sugar
1/2 tsp vanilla essence
1 tsp baking soda
3 tbsp small banana/fruit pulp
2 tbsp cashew nut pieces
