Soak the blue berries in lukewarm water for 30 minutes. Keep 1 cup of lukewarm water
aside. Heat the remaining quantity of the milk in a thick bottomed pan. Keep stirring till it is reduced to half its quantity.
Mix the lukewarm milk with the milk powder, stir and blend so that no lumps form.
Also, mix the rice powder in a cup of lukewarm mix.
Now, add the riceflour mix and the milk powder mixed in lukewarm milk to the reduced
Add the coconut powder and elaichi powder and the sugar. Stir gently stirring all the
time till the sugar blends well into the milk and the rest of the ingredients help the milk mixture begins to thicken. Once the mixture begins to thicken put off the milk
and add the soaked blueberries and stir gently.
Pour this mixture in small quantities to full the kulfi moulds. Allow to cool.
Screw the lids onto the moulds and put in the freezer till set and solid. Unmould and serve.
