Carrot Kheer

Method
  1. Put carrot in boiling water, cover pan, keep aside for 5 minutes.

  2. Drain, pour cold water over it.

  3. Squeeze out all water,by pressing between palms.

  4. Keep aside.

  5. Put milk to boil in a large pan.

  6. Simmer for 15 minutes, stirring frequently.

  7. Add sugar, bring back to boil.

  8. Add carrot, simmer for 2-3 minutes.

  9. Garnish in serving bowl with raisins, pistachios, rosepetals.

  10. Serve hot, or chilled as desired.

  11. Do not reheat or it might curdle.

Ingredients:
1 litre milk
2 carrots, peeled grated
1/2 cup sugar
1/4 tsp. cardamom powder
8-10 raisins
8-10 rose petals (optional)
8-10 pistachios unsalted, skinned, slivered thinly
