Blueberry muffins

Method
  1. Preheat the Oven to 400F. Grease the muffin cups.
  2. Combine the dry ingredients.
  3. place vegetable oil in a 1cup measuring cup. Add the egg and enough buttermilk to bring it 1 cup mark. Mix this with the flour mixture.
  4. Fold in the blueberries.
  5. Fill the muffin cups and sprinkle the crumb topping. (To make the crumb topping - combine all the ingredients in a flat bowl using a fork and keep mixing until it resembles bread crumbs).
  6. Bake for 20 -25 mins or until done. (Insert a toothpick in the center of the muffin and check if it comes out clean).

Ingredients:
1 1/2 cups all purpose flour
3/4cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3cup buttermilk
1 cup blueberries (Fresh or Frozen)

For the crumb topping

1/2 cup brown sugar
1/3 cup all purpose flour
1/4cup butter (Cubed)
11/2 tsp cinnamon
