Creative cooking with cucumbers

Base mix: Wash, peel and chop the cucumbers into fine pieces. Add the mint chutney, chilli powder, salt and squeeze the juice of lemon over it. Toss well and crunchy cucumber salad is ready. This is the base mix.

Variation 1: Omit the lemon juice. Add curd to the base mix and delicious raitha is ready.
Variation 2: Omit curd. Add chopped onions and tomatoes to the base mix along with the lemon juice and you can have it by itself or with chips, papad or khakras.
Variation 3: Boil, peel and chop potatoes. Add to the base mix and use it as a healthy stuffing or spread the mixture between to slices of bread and a quick sandwich is ready.
Variation 4: Make a paste of half a cup besan or chickpea flour, add water, salt, turmeric powder and chilli powder and mix into paste (add water little by little so that the batter doesn�t become too thin). Add the base mix into this paste. Pick up little bits in you palm and deep fry in hot oil and enjoy as pakoras.

These are few simple variations. You can experiment with your own set of ingredients and enjoy the process of creative cooking with cucumbers.

Ingredients:
2 medium sized cucumbers finely chopped
Mint chutney (made with a bunch of coriander, green chillies and pudina/mint leaves and very little salt and blended in a mixer with a little water)
Salt to taste
A pinch of red chilli powder
Half a lemon
