Method
- Boil the potatoes, peel the skin and mash into a smooth paste.
- Then coarsely chop the spinach and the cilantro.
- Chop onion into tiny pieces.
- Then mix all of the above things with the rice flour and the red chilli powder and salt.
- The mashed potatoes have enough moisture - no need to add water.
- Mix them all into a thick paste.
- Then make the the potato mixture into small patties just like vadas.
- Heat a pan and place these patties on the pan, pour some oil around them.
- Let them cook for a while, by pressing them with a spatula so as
to cook them evenly.
- When one side becomes golden brown, turn to the other side and cook again.
- Repeat the same process with all the patties
or pancakes.
- Remove from pan onto a serving bowl.
- Serve the potato pancakes hot with ketchup.
