Potato pancakes

Method
  1. Boil the potatoes, peel the skin and mash into a smooth paste.
  2. Then coarsely chop the spinach and the cilantro.
  3. Chop onion into tiny pieces.
  4. Then mix all of the above things with the rice flour and the red chilli powder and salt.
  5. The mashed potatoes have enough moisture - no need to add water.
  6. Mix them all into a thick paste.
  7. Then make the the potato mixture into small patties just like vadas.
  8. Heat a pan and place these patties on the pan, pour some oil around them.
  9. Let them cook for a while, by pressing them with a spatula so as to cook them evenly.
  10. When one side becomes golden brown, turn to the other side and cook again.
  11. Repeat the same process with all the patties or pancakes.
  12. Remove from pan onto a serving bowl.
  13. Serve the potato pancakes hot with ketchup.

1/2 medium Onion
5 or 6 tsp Rice Flour
1/2 tsp Dry Red Chili Powder
Salt to taste
