Stir Fried Spinach with Baby Corn
Method
- Chop the spinach finely and wash well.
- Chop the baby corn into big cubes.
- Wash and pressure cook the baby corn with little salt till tender but crunchy. (It should be done in 3-4 whistles).
- Heat oil in a kadai, add finely chopped onions, crushed garlic and green chillies.
- Saute on a low flame till the onions are pink in colour.
- Add spinach and saute on a high flame for five minutes.
- Add boiled baby corn and salt to taste.
- Saute till the spinach is cooked and the water has completely dried.
- Serve hot with phulkas.
Ingredients:
2 bunches - spinach
1 packet - baby corn
3 - medium sized onions
3 - green chillies
6 to 8 - flakes garlic
3 tbsp - oil
salt to taste
