Jaradi Payasa

Method
  1. Take a cup of rice flour in a bowl adding a pinch of salt to it.
  2. Make a thick paste of pouring consistency by adding a little water and keep aside.
  3. Heat a medium-size vessel on a stove; pour remaining water to it, mix jaggery and bring to boil by stirring well.
  4. Now take a strainer or boondi maker (jaradi in kannada) hold it on top of the vessel.
  5. Spread the flour mixture on the strainer so that you get very small balls (like boondi).
  6. Keep the stove on medium heat and let this cook for 5 minutes.
  7. Finally add coconut milk and cardamom powder; cook for 2 minutes while stirring continuously.
  8. Remove from heat and serve the delicious payasa.

Note: You can add 1 tsp of ghee with raisins and cashews to the payasa to make it flavourful.

1 cup rice flour
1 cup jaggery
1 cup coconut milk
3 cups of water
1/2 tsp cardamom powder
A pinch of salt
raisins and cashews (optional)
1tsp ghee (optional)
