Paneer Dry Fruit Kozhukattai

Method
  1. Make the jaggery syrup by heating the jaggery in a thick bottomed kadai.
  2. Filter the syrup to get rid of the dust particles.
  3. Heat ghee in a kadai and roast the dry fruits lightly.
  4. Add all these to the jaggery syrup along with the cardomom powder and heat them till they get to a thickened poornam mixture.
  5. For the Kozhukattai, heat 1 cup of water in a kadai.
  6. Add a little salt to the water.
  7. When water boils, add rice flour and stir well.
  8. Once the flour thickens remove from fire and set aside.
  9. Mix the dough well with a little oil and make small balls out of the mixture.
  10. Flatten the balls and then press with your thumb to get a cup shape for the kozhukattai.
  11. Fill in the poornam and then steam cook the kozhukattai.
Ingredients:

To prepare the Kozhukattai:
1 cup - rice flour
1 tsp - salt
1 tbsp - oil

To prepare the Poornam:
1 cup - grated paneer
1 tbsp - finely chopped almonds
1 tbsp - finely chopped pistachios
1 tbsp - finely chopped cashew nuts
1/2 tsp - cardomom powder
1 cup - powdered jaggery
1 tbsp - ghee
