Method
  1. Soak rice in water for 2 hours.
  2. Drain water and spread rice in a clean cloth to dry.
  3. Powder it when it is partly dry.
  4. Sieve it to get a fine powder.
  5. Add 1/4 cup of water in a thick bottom pan.
  6. Now add the jaggery to it.
  7. When the jaggery melts filter it to get rid of the dirt.
  8. Stir the melted jaggery in low heat.
  9. After 5 mins, check the consistency by pouring a drop of syrup in a cup of water.
  10. When touched by finger it should roll into a soft ball.
  11. This is the right consistency.
  12. Remove from fire and add cardomom powder, dry ginger powder and khus khus.
  13. Stir well and add the rice flour to it.
  14. Mix well till you get a chappathi dough like consistency.
  15. Leave it outside overnight.
  16. Heat oil in a pan and make small balls of the dough.
  17. Spread some oil in a pastic sheet and place the ball on it.
  18. Flatten to form small patties.
  19. Deep fry in hot oil until golden brown.
Ingredients:
1 kg - raw rice
3/4 kg - jaggery
1 tsp - cardamom powder
3 tsp - khus khus
1/2 tsp - dry ginger(sukku), powdered
oil for deep frying
