Method
- Add 1/2 tomato & 1 onion chopped, to the dal.
- Add turmeric
- Pressure cook till dal is done very soft. (Approx. 2 whistles)
- Remove dal and beat with a whisk with back of the spoon.
- Add enough water to get sambar consistency
- Add all the vegetables, onion, tomato, red chilli powder, salt and dhania powder
- Let it cook till the vegetables are tender
- Add sambar masala and asafoetida, and let it boil for 5 minutes
- Heat oil, add seeds and allow to splutter.
- When all the seeds splutter, put the seasoning in sambar
- Add jaggery and tamarind water
- Bring to a boil on high.
- Serve hot
Making time: 30 minutes (excluding pressure cooking time)

Ingredients:
1 cup toor dal (washed and soaked for 30 minutes)
1/4 tsp. turmeric powder
1 tsp. dhania powder
1 tsp. red chilli powder
3 whole red chillies
3 onions, chopped finely
1/2 cup pumpkin or bottle gourd cubed
3 lady fingers, cut into 1/2" pieces
1 potato, cubed
1 large tomato, cubed
1 tbsp. chopped coriander leaves
1/4 tsp asafoetida
2 tbsp. sambar masala
salt to taste
4-5 strips tamarind soaked for 5 minutes (paste or pulp may also be used)
1 tbsp. jaggery or sugar
1/2 tsp. mustard seeds
2 tbsp. oil
