Vegetable Noodle Soup

Method
  1. Combine all the ingredients from carrot to ginger together.
  2. Add water or stock. Simmer till the vegetables are �tender crisp�.
  3. Add noodles, salt and pepper. Simmer till the noodles are cooked.
  4. Add soya sauce. Mix corn flour with 2 tbsp of water and add.
  5. Simmer for 2 more minutes and serve immediately.

Note:

  • If the soup is not to be served soon after cooking, cook the noodles separately and reserve.
  • At the time of serving, heat the soup and add the noodles.

Serves: 4

Ingredients:
4 cup - water or stock
� cup - spring onion, chopped
� cup - noodles, broken into 4 cm long pieces
� cup - carrot, shredded
� cup - cabbage, shredded
� cup - beans sprouts
� cup - green capsicum, cut into thin strips
1 tsp - ginger, shredded
salt, pepper to taste
2 tsp - soya sauce
2 tsp - corn flour
