Bhune baingan ka salad

Method
  1. Cut brinjals lengthwise into two. Sprinkle with salt and reserve for 10 mins.
  2. Bake till soft but whole. Remove flesh and cool cases.
  3. Mix flesh with cream, chicken, corn, salt and pepper.
  4. Pile over the six halves of brinjals.
  5. Dot with sauce and serve cold.
Ingredients:
3 long, large brinjals

2 tbsp. butter
1&1/2 cups cream
1 cup soft cooked corn
1 cup cooked shredded chicken
1/4 cup tomato sauce
Salt and pepper
