Braised Leeks and Carrots in Olive oil

  1. Wash the leeks and cut into diagonal slices.
  2. Scrape the carrots lightly and cut the carrots into quarter inch thick circles.
  3. Place these vegetables in a big saucepan.
  4. Wash the rice and drain out all the excess water.
  5. Now, place the washed rice, salt, sugar, pepper and the parsley over the vegetables.
  6. Sprinkle half the quantity of the water over the vegetables and cook on low fire covering with a lid.
  7. Once most of the water is evaporated add the remaining water and allow the vegetables and rice to cook further till soft and cooked.
  8. Sprinkle the lemon juice and sprinkle the olive oil a little at a time.
  9. Gently remove to a serving dish without breaking the cooked vegetables.
  10. Serve hot or you can keep in the fridge and serve it cold.
Fresh green leeks - 4
Carrots, cut into circles - 2
White pepper powder - 1/2 tsp
Chopped parsley - 2 tsp
Lemon juice - 1 tsp
Water - 2 cups
Sugar - 3 tsp
Long grained or small grain rice - 2 tbsp
Olive oil - 2 tbsp
Salt to taste
