Jelly fruit salad

  1. Make jelly as per instructions but with ½ the water. Cool.
  2. Hold the pot over ice cubes and whisk vigorously till frothy. Continue till cold.
  3. Add cream and fold in without churning so cream does not curdle.
  4. Arrange fruit in a bowl.
  5. Pour frost over and set in the fridge. Decorate with cherry slices before serving chilled.
1 packet strawberry jelly
1 cup cream
5 glace cherries
2 cups mixed fruit, chopped (pineapple, pears, grapes, etc.)
