Method
Peel and slice ginger into 1 inch strips.
Put them in a dry sterilized glass bottle.
Add juice of about 4 to 5 limes or lemons, roughly enough to cover the ginger.
Add salt and chilli flakes, keep it in sun or near a heat source for about 5 days.
Ready to eat.
Does not spoil as long as you use dry clean spoon.
