Pumpkin Gojju

Method
  1. Grind the almonds and fried chana into a fine powder.
  2. Heat a tsp of oil in a pan and fry the ingredients in the following order - chana dal, urad dal, methi, sesame seeds and finally green chillies.
  3. Grind this mixture into a fine powder.
  4. Now mix both the dry powders along with water, coriander leaves, ginger, turmeric, tamarind and brown sugar into a fine paste.
  5. Cut the pumpkin into small cubes (~1&1/2 cms) and cook with salt on stove top. (take care so that it is cooked just right about 10 min otherwise it becomes mushy).
  6. Add paste to pumpkin and bring to a boil.
  7. The gravy should be the consistency of pasta sauce or dosa batter.
Ingredients:
1 Kg/2.2 lb - pumpkin
6-8 - green chillies (depends on how spicy you want it)
1 handful - chopped coriander leaves
2 tsp - urad dal
1 tsp - chana dal
2 tsp - hurigadale/putaani/channa dhalia
1/4 tsp - methi (fenugreek)
2 tsp - sesame seeds
1/2 cup - almonds
1/4 tsp - turmeric
1/4 tsp - ginger paste
2 tsp - brown sugar
1 tsp - tamarind paste
Salt to taste
