Vegetable Clear Soup

Method
  1. Wash and boil all vegetables in a pressure cooker (2-3 whistles) except tomatoes.
  2. Blanch the tomatoes (blanching is a process where you leave the tomatoes in hot boiling water for a few minutes in a pan. You will see that the skin will start peeling automatically).
  3. Peel the tomatoes and blend them in a blender/mixer with a little water.
  4. Pour the tomato puree/juice in a saucepan and add the boiled vegetables (with the water the vegetables are boiled in)
  5. Add salt, pepper and butter (optional) to taste.
  6. Garnish with cilantro/coriander
  7. Serve hot.
Ingredients:
Cabbage- a quarter, sliced thin
1 - carrot cut into 1 inch long and thin strips
1/2 cup - sweet peas
1 cup - cauliflower (medium-sized florets)
2 - tomatoes
1/2 cup - sweet corn kernels
1/2 cup - french beans, cut into 1 inch long and thin strips
Cilantro/Coriander, a few sprigs
Salt to taste
Black pepper powder, to taste
1/4 tsp - butter (optional)
