Moong bean fritters

Method
  1. Soak moong beans overnight and grind into a soft paste in the morning.
  2. Don`t add too much water for grinding as the batter should be thick, which makes it easy to shape.
  3. Chop onions, cilantro, green chillies and ginger into fine pieces and add these pieces to the moong bean batter prepared above.
  4. Mix well and adjust salt.
  5. Heat the oil in a deep bottomed pan.
  6. Take a small portion of the batter and shape it into a circle on your palm or use a plastic sheet.
  7. Drop these circles into the hot oil carefully.
  8. Deep fry till the fritters turn golden brown in colour and then remove from the oil.
  9. Repeat the same process with rest of the batter.
  10. Place these fritters (vadas) on a paper towel to remove excess oil.
  11. Enjoy these yummy fritters hot or cold with your favourite chutney.

1 small onion
A handful of cilantro
3 or 4 green chillies
A small piece of ginger
Salt as required
