Method
- Pressure cook (directly in the cooker) the grated carrot and almonds without any liquid for 3-4 whistles.
- Cool completely and extract 1/2 cup carrot liquid, keep aside.
- Add the sugar and over low heat, stir well till sugar dissolves.
- Mix the flour with carrot liquid to make a paste and add to carrot mixture.
- Stir well and cook for 3-5 minutes till a thick mass is formed.
- Take care not to scald as there is no grease.
- Sprinkle cardamom powder and close the cooker.
- Switch off heat.
- Just before serving, stir again.
- Serve hot or cold.
Ingredients:
1 kg - grated carrot
1/4 cup - sugar
2 tsp - cornflour or plain flour (maida)
1/2 tsp - cardamom powder
100 gm - almond slivers (optional)
a few drops - orange or red food colour (optional)
