Coconut Cake

Method
  1. Grease the microwaveable pan with the non stick spray, instead of ghee.
  2. Then add the coconut and microwave for a minute and stir it.
  3. Now add the sugar and stir and microwave for 2 minutes.
  4. Take it out and cool and chill it and stir.
  5. If the coconut and sugar combine then keep it for 1 minute and spray the non stick oil and take it out.
  6. Now you can fry the nuts in the microwave in another microwaveable dish by spraying with this non stick oil which is fat free.
  7. Then add the nuts to the coconut mixture and make small balls.
  8. This is very delicious because it is fat free.

Note:

  • Buy the dessicated coconut that has milk extracted out.
  • In this way you avoid half the fat of the coconut milk and the oil.
  • Because by the time the coconut is taken out all the oil is also taken out when the machine press it.
Ingredients:
2 cups - dessicated coconut
1 1/2 cup - splenda
ghee or non stick spray
nuts (almond, cashew nuts, pine nuts)
