Corn Rice

Method
  1. Put the corn in a microwave-safe dish with 1 cup water.
  2. Cover and microwave at 100% power for 5 minutes or till the corn is tender.
  3. Exact timings would depend on the quality of the corn. Drain the extra water.
  4. In a large, flat-bottomed, microwave-safe dish, heat the oil at 100% power for 2 minutes.
  5. Add the cumin seeds, after a minute add the cardamom and after a minute add the onions.
  6. Stir and continue to cook at the same power level for 4 minutes.
  7. Mix the fried onions add boiled corn, rice and salt.
  8. Add 4 cups water and mix well.
  9. Microwave uncovered at 100% power for 15 minutes then reduce power to 60% and cook covered for another 5 minutes.
  10. Stand 5 minutes. Serve hot.
Ingredients:
2 cups - rice, picked, washed and soaked
1 cup - yellow corn
3 - onions, sliced
4 cups - water
1 - black cardamom, pounded
1 tsp - cumin seeds
1 - vegetarian or non-vegetarian stock cube (optional)
2 tbsp - oil
salt to taste
